How Breyers Yogurt Earns the
“Moo of Approval” from Mabel

This is the story of how Breyers yogurt preserves the wholesome goodness of Mabel’s milk all the way from the farm to your table.

It starts with the cleanliness and care at the dairy, where fresh milk from healthy dairy cows is picked up daily and tested against stringent quality standards.

Once the whole milk meets our strict quality measures, it’s piped into a large stainless steel tank and separated into rich, fresh cream and non-fat skim milk. Different kinds of yogurt use different amounts of each.

The next step is to add the dry ingredients to the milk. These include fortification with additional milk solids, whey proteins and other thickening agents, which are used to help the yogurt achieve the desired viscosity and texture. Depending on the product we’re making, various amounts of sugar also may be added at this point.

Like many other steps in the yogurt-making process, the ingredient mix is controlled by a highly accurate computer system, which is closely monitored by the yogurt makers.

In the next step, the mix is pasteurized. This is the process of heating the mix in order to kill any undesirable microorganisms that could cause impurity or spoilage.

And now we’re ready for the step that turns milk into yogurt:

In spotless stainless steel tanks, we produce the “starter.” This is the natural, healthful bacteria known as a “culture” that will ferment the milk and make it into yogurt.

After the mixture reaches exactly the right acidity, consistency and texture, it’s immediately cooled to below 40 degrees to control the fermentation process. Now we have yogurt! Pure, fresh, Breyers yogurt that’s ready for mixing with the fruit and flavors you love to taste.

Then, depending on the product we’re making, the fruit and fruit flavorings are either mixed with the yogurt or placed directly into the cups for our delicious Breyers Fruit-on-the-Bottom products. This happens at the filling machines, where the yogurt base is rapidly and accurately jetted into the plastic cups you see in retail stores.

After the cups are filled, every single one is inspected for accurate weight, a tight seal and visual appearance. Only then do we add the control date that insures the consumer of the freshness of our yogurt.

But even after we make our yogurt, we’re not yet through with the care and concern we have for delivering great products. We also monitor the condition of the refrigerated trucks and warehouses we use for shipping our products to the stores.
